Kalla Veetu Aviyal is a traditional Chettinad gravy served with idli and dosa for breakfast. It is a spicy kurma made with potato and brinjal with special Chettinad Kurma Masala(Aviyal Masala). It takes only a few minutes to prepare Kalla veetu aviyal because the ingredients are so basic and the recipe is one easiest recipe ever.

Ingredients :
- 2 onion(medium-size) (200 grams) finely chopped
- 1 tomato(small,100 grams) – finely chopped
- A sprig of curry leaves
- 1/4 cup of gingelly oil)Indian sesame oil)
- 2 brinjal(big)- chopped
- 1 potato with skin – chopped
- 1/4 tsp of Turmeric powder
- 2 cinnamon stick(each 1.5 cm)
- 3 cloves
- 1/4 tsp of fennel seeds
- 3 tbsp of coriander leaves- chopped
- 3 cups of water
- 1.25 to 1.5 tsp of salt(adjust to taste)
Aviyal Masala:
- 1/4 cup of grated coconut
- 1 tsp fennel seeds
- 1 tbsp broken cashew nuts(around 5 to 8 whole cashews)
- 3 short red chili(remove the stem)
- required water for grinding
Procedure:
- In a medium-size pot, heat the gingelly oil and, When the oil is hot, fry the fennel seeds, cinnamon sticks, cloves, and curry leaves for a second.
- Fry the onion until golden and then, fry the tomatoes until soft and mushy. Season the veggies with some salt and turmeric powder.
- Add in the brinjal and potato fry for a second and add two cups of water.
- Adjust the salt level and cover the pan with a lid. Let the veggies cook well until tender. It will take about 10 minutes or so.
- While the veggies cooking, grind the ingredients for Aviyal masala into a smooth paste.
- Once the veggies cooked, add in the aviyal masala and a cup of water then, mix well. Adjust the salt level and Let the Kalla veetu aviyal boil for 20 minutes or until reaches the desired thickness.
Serve the Kalla Veetu Aviyal with Idly,dosa,chapati and pori.
