Whenever Banana ripe, I bake banana bread at home. Every time I get the same excitement when the banana bread is baking in the oven. In fact, sometimes I eat the piping hot cake, right when it is out of the oven. I am that impatient for this banana bread recipe. It is not the usual moist banana bread recipe that we buy at the bakeries. It is something special, different, between cake and bread but so delicious that you won’t even think about the traditional banana bread anymore. Sometimes, the banana bread we get at the market has an excess banana flavor and so strong banana smell, as if they used a artificial banana flavor. Unlike the commercial banana breads, this recipe has the right amount of sweetness and a natural banana flavor.
The key ingredients for this Banana bread recipe are coconut sugar, mini semi-sweet chocolate chips, chopped walnuts and, last but not the least, cashew butter. All these ingredients together make some magic. For the better taste, Please try to follow the exact recipe.
Note: If you choose to leave the choco chips then, you may have to adjust the level of sugar. The sugar level in this recipe is proportional to the mini semi-sweet choco chip. So if you choose any other choco chip or decided to omit them, you have to adjust the sugar level accordingly.

Ingredients:
- 70 to 75 grams of coconut sugar
- 1/4 cup unsalted melted butter
- 2 tbsp cashew butter
- 1 Large egg
- 1.25 cup mashed banana(1cup +1/4 cup)
- 1/2 tsp vanilla essence
- 1.5 cup all-purpose flour
- 1/8 tsp salt
- 1 tsp baking soda
- 1/2 cup semisweet mini chocolate chip
- 1/4 cup chopped walnuts
- For extra flavor add 2 pinch of cinnamon powder(optional)
Preparation:
Preheat the oven to 350 degrees Fahrenheit.
Procedure:
1. In a bowl combine all the dry ingredients.(all purpose flour,salt,baking soda,chocolate chip,chopped walnuts). Keep the Bowl aside.
2. In another bowl, first, cream sugar,Cashew butter and melted ghee then drop an egg and whisk until well combined and lightly fluffy. Add the Vanilla essence, mix well.
3. Add in the mashed banana and whisk until well combined.
4. Switch the whisk to a wooden or any mixing spatula.
5. Finally, add the combined dry ingredients to the wet ingredients bowl and gently mix everything until well combined. Make sure to mix the flour in one direction.
6. Line a bread baking mold with a parchment paper and pour the bread batter. Spread the batter evenly and tap the mold to release the airlocks if any.
7. Place the bread mold into the preheated oven and bake for 55 to 60 minutes until the toothpick inserted in the middle comes out clean.
8. Remove the Banana bread from the oven and let rest for 10 minutes on the counter top.
9. Demold the Banana bread and serve the warm banana bread with cold milk or vanilla ice cream.
