Cabbage Sandwich – Korean Street food

Korean Street Sandwich/Cabbage Sandwich is Korean street food, its Korean name is, Gilgeori-Toast. Like India, Street food is a big part of Korean culture. Gilgeori translates to the street(walking street). The literal translation would be Street-toast. I came up with the name “cabbage sandwich” because 80% of the content is cabbage. I don’t speak Korean, after some serious internet research I have learned the meaning for Gilgeori. Now, along with me, you too have learned a Korean word, right? It seems geori is the more common word for street.

This cabbage sandwich/gilgeori toast is my recent Pandemic favorite food. Just a few seconds, Whisk few basic ingredients all together like egg and cabbage, and cook, voila, the cabbage sandwich is ready in few minutes. Combining the veggies with eggs is the best way ever to increase the daily veggie intake. It has become my pandemic favorite because I can have a tasty meal all the time without the fear of quickly finishing the fresh produces. You might be already familiar with cabbage, it is one vegetable with fortunate longevity(and never ages) that will never go bad in the fridge, and, takes forever and ever to finish it. In case you have no idea about cabbage’s shelf life, right now, write down the cabbage in your pandemic grocery shopping list.

India and East Asian Countries have cultural similarities?

I am always curious about other cultures, languages also, I think every culture in the whole world is connected through food. Recently I have been interested in east Asian countries like Korea, Japan, Thailand, and so on. If you don’t know, my native is Tamil Nadu, a southernmost state of India. When I started learning about East Asian cultures, I could see some similarities between Southern India and Korea, also Between India and Thailand. I had heard during the kinds period in India, Tamil Kings spread their kingdom to Thailand. As Proof, some temples established under Tamil King’s rule have been standing strong to this date. So, quite reasonable to witness slight(really slight) traces of southern Indian culture in Thailand. But, not sure what kind of relation India and Korea had in the past.

I am also thinking, is it because Buddhism has started in the eastern region of India. In the past, Korea was Buddhism influenced country. At Present, Buddhism is not in practice by a large group of Koreans but hasn’t completely eradicated from Korea. Koreans that practice Buddhism do exist, the number may not be large. One thing I am dumbfounded about is even some Korean words are similar to Tamil words, isn’t it Fascinating?

The more I learn about other cultures, my belief that “the world is one”; “we are all connected” is growing stronger.

egg sandwich recipe

Ingredients:

  • 2 – slices of white sandwich bread
  • 1.5 to 2 cups of finely sliced cabbage
  • 1/2 a small onion – sliced
  •  a stalk of green onion/spring onion/scallions – chopped
  • half of the small carrot – thinly sliced julienne
  • 1/8 to 1/3 tsp of salt(adjust to taste)
  • 1/8 tsp of black pepper crushed – adjust to taste
  • 3 tsp of soy sauce
  • 1/8 tsp of turmeric powder – optional
  • 1 – small Thai/Indian green chili chopped(optional)
  • 1 – large egg
  • 2 tbsp of butter

Procedure:

  1. Toast the bread slices.
  2. In a bowl, combine all the veggies and seasoning very well(salt, black pepper, turmeric, soy sauce).
  3. Crack the egg into the veggie bowl and combine the egg and veggies well.
  4. Heat a skillet with butter and, when it is heated, pour the prepared mixture(veggie and egg) on to the skillet. With the spatula, gather the sides to make a shape similar to the bread slice. 
  5. Let the bottom side cook for 3 to 4 minutes over medium heat and, carefully flip to the other sides, let it cook.   
  6. Once the egg is cooked, place it on a slice of a toast. Sprinkle some sugar over the egg and squeeze lots of ketchup and close the sandwich with another slice of toast. Tada, Korean street toast is ready!

Note:

Serve the toast warm for better flavor.
