Chana Masala is a traditional Punjabi chickpea(garbanzo) semi gravy recipe. It is one world popular North Indian dish. Chana Masala is commonly referred as Chole in North India and, mostly served with bhature, a type of Indian deep fried flat bread. Chole and bhature are actually a twin food. Every corner of the North Indian street has Chole bhature food stall.

Ingredients:
- 1/3 cup of oil
- 300 grams or 2 medium Size onion Paste
- 150 grams or 2 medium grated tomato
- 2 tsp of garlic paste
- 2 tsp of ginger paste
- 1/4 cup finely chopped coriander leaves
- 1 TBSP of Homemade Channa masala Powder
- Water , if required
- 1/4 tsp of chili powder(Adjust according to your taste)
- 1/2 tsp of Coriander powder
- 1 to 1.25 tsp of Salt (Adjust according to your taste)
For Tadka
- 2 TBSP ghee
- 1 TBSP cumin seeds, roasted and powdered
- 3 Medium size green chili
To cook garbanzo beans
- 1 black cardamom
- 3 green cardamom
- 4 cloves
- 3 cinnamon sticks (2 cm each)
- 2 bay leaves
- 2 petals of star anise
- 200 grams of Dry garbanzo beans, soaked in the water for 6 to 8 hours
- 1 Tsp of salt
- Pinch of hing
- 1 Black tea bag
- 2 to 4 cups of water (Water should be one each above the Garbanzo Beans)
- 1/4 Tsp of Baking Soda(Optional)
Procedure:
1. In a Pot Add everything under ‘To cook Garbanzo beans’ and, let it cook until the beans are very soft. You can also cook the beans in a Pressure cooker for a whistle or until beans are very well cooked. Separate the spices and tea bags from the cooked beans, with the water, keep the beans ready to use.
Step 2:
2. Heat the required oil in a pot and, add the onion paste, cook them until oil separates and onion is well cooked.
3. Add the ginger paste, garlic paste, coriander leaves cook them for about one minute or until the raw smell of ginger and garlic is gone.
4. Saute the tomato paste and Salt to the masala continue to cook until the oil separates. Once the onion and tomato become one like a paste, add in the Homemade chana masala powder and mix well for 30 seconds.
5. Add in the cooked beans(with some cooked in water) and Let it cook for 2 to 3 minutes then, turn off the flame.
Step 3 : Tadka
1. In a small pan, add ghee, whole green chili, Heat the ghee until the green chilies become pale green in color
2. Add the Roasted cumin powder to the hot ghee and switch off the flame.
3 . Pour the tadka over the chana masala, Mix everything together. Garnish the chana masala with ginger juliennes.
Serve the chana masala with naan, chapati, rice or bature.
