Chettinad chicken recipeĀ is a traditional spicy chettinad dish. The key ingredients of the chettinad chicken is round red chilli, Kalpasi,shallots and gingelly oil. We cannot find a restaurant with out chettinad chicken on the menu card it is that popular.

Ingredients:
- 500 grams of bone in chicken
- 4 tbsp sesame oil
- 3 sprigs of curry leaves
- 150-gram shallots chopped
- 1 tsp salt
- 1/4 tsp turmeric powder
Spices for Chettinad Masala:
- Sesame oil
- 1/2 inch cinnamon stick
- 2 clove
- 1 tsp of kalpasi
- 4 to 6 short dry red chilli / gundu milagai
- 1 tsp coriander seeds
- 1/2 tsp fennel seeds
- 1/2 tsp black pepper powder
- 1/4 tsp cumin seeds
- 6 garlic
- A small piece of ginger(optional)
- 100-grams shallots

Procedure:
Step 1: Chettinad Masala
1. In a pan heat the sesame oil and fry the spices, garlic, and ginger for few seconds until garlic is golden.
2. Remove the ingredients to a plate and let it cool. Once cooled, grind into a smooth thick paste. If required, add water but make sure the masala is thick.
Step 2:
1. In the same oil used to fry spices, fry the curry leaves and shallots until shallot is golden.
2. Add the chicken pieces, some salt, and turmeric powder and saute until chicken becomes pale. It will take about 2 minutes.
3. Now, add the ground Chettinad Masala and again saute for 3 minutes or until the bright red color is developed.
4. Reduce the flame and cover the pan with a lid. Let it cook until chicken is well cooked and, the oil floats on the top, about 15 minutes or so.
5. Chettinad Chicken is ready to serve!
