Idly Milagai Podi is a spicy dry condiment for Indian breakfast’s like idly dosa, some times even for chapati. It is a ground roasted lentil and spices. Paruppu podi is a traditional recipe of South India specifically Tamil Nadu, Andhra and in some regions of Karnataka. Some people call it Paruppu Podi, kara podi and so on. So there are two styles Andhra style and Brahmin style. In My recipe, I have joined both the style and also I have added my special ingredients.
For a Change in the the Usual Paruppu podi recipe, I have added Kollu/Horse Gram. In Tamil Horse is called Kollu and it has great health benefits. But, In our everyday food, we don’t use a horse that often. Horse Gram gives a smoky and nutty flavor to the usual Idly Milagai Podi. Kollu Idly Milagai Podi is the best way to include horse gram in our everyday diet. I know there are already millions of idly podi recipe online however Everyone’s idly Milagai podi taste different. Hence, I have decided to share my version of Idly Paruppu Podi recipe.

Ingredients:
- 1/2 cup Kollu/Horse Gram
- quarter cup channa dhal
- 12 red chilies (from 8 to 12), broken into small pieces
- quarter cup split black urad dhal
- 1/2 tsp fenugreek seeds(from 1/2 tsp up to 2 tsp)
- 3 tbsp of sesame seeds
- 1 tbsp of cumin seeds
- quarter cup of garlic or 25 to 30 small garlic cloves
- 2 tbsp of fried channa dhal
- quater cup of sun-dried curry leaves
- 1 tbsp of salt(adjust to taste)
- quarter cup desiccated coconut
Procedure:
1. Preheat a small pan.
2. Reduce the heat to medium-low and add the horse gram.
3. Roast the horse gram until brown and fragrant and transfer to a plate.
4. Similarly roast all other ingredients until golden and fragrant, except curry leaves, desiccated coconut, and salt.
5. Allow the lentils and spices to cool down to room temperature.
6. Together blend the ingredients into fine Powder as possible. Like normal idly milagai podi, coarse kollu idly milagai podi won’t taste good
Serve the kollu idly milgai podi with steamed idly, dosa and sesame oil/ghee.
How to Serve:
Mix a tablespoon of idly milagai podi with sesame oil/ghee/any unflavored oil. Serve it as a dip for idly/dosa/chapati. I like to mix with sesame oil.
