Karandi Omelette Recipe | Chicken Stuffed Omelette Recipe

Serves:

Karandi Omelette recipe is nothing but cup shaped omelette. Beaten egg is cooked in a small cup shaped pan. While the omelette is cooking cooked chicken or mutton or prawn is stuffed in the center.

Ingredients :

2 Eggs
2 tbsp of onion
1/4 tsp of salt or required salt
1 Small green chili (chopped)
Required black pepper powder(optional)
1/8 tsp of turmeric powder
3 to 4 tsp of oil (may need more oil if cooked in iron or stainless vessel)

For Stuffing :

About four table spoon of Chicken Masala. Use any thick consistency boneless chicken Masala. I used my Signature chicken Masala.

Procedure:

1. Into a small bowl, Add the chopped onion, salt, turmeric powder, pepper powder, green chili and mix well with a spoon or fork.
2. Crack the two eggs into the onion and Masala mixture.
3. Beat the eggs with a fork or whisk until the yolk and egg white are well combined and frothy.
4. In a small round cup like pan, heat the oil.
5. When the oil is hot enough, pour the egg mixture into the pan(when you pour the beaten eggs, the oil should be hot enough).
6. Next, Drop the Chicken masala in the center of the omelet and gently spread the Masala.
7. Let the karandi omelette cook until the bottom layer of the omelet becomes thick. It will take about a minute or so.

8. Now, with the fork gently flip the omelet upside down and let the other side cook similarly.
9. Similarly, keep flipping the omelette till the omelette is fully cooked. While you flip the omelette , with a fork make a small hole in the center of the omelette so that the uncooked egg in the center can escape. Pricking the omelet will help the omelette to cook evenly.
10. If you like a runny egg then, you can stop cooking the karandi omelette , a few minutes earlier, so that, the center of egg remains runny.

Note: 1. For the stuffing use any masala like prawn, veg, mutton, fish.
2. Skip the stuffing for Plain Karandi omelette recipe.
3. For the plain Karandi Omelete recipe increase the quantity of spice and salt.
