Ingredients:
Okra/Lady’s Finger 20
1/2 cup Besan Flour
2 TBSP Rice Flour
1/8 TSP of Chaat Masala to garnish (Optional)
Dry Spices
1/2 tsp Salt
1/2 TSP Chili Powder
1/2 TSP Coriander Powder
1/8 TSP Garam Masala(Optional)
Procedure:
Step 1:
1. Wash the okra’s in a colander, Let them dry completely in the Colander. It may take 1 to 2 Hours to dry or Using a kitchen towel wipe the water.
2. Cut them into medium size pieces, refrigerate them overnight(or at least an hour) in an airtight container or in a Ziploc bag
Step 2:
1. Mix Rice flour, channa dal flour, dry spices all together in a bowel.
2. Add 1/4 of the flour over the okra’s, spread them using a fork and mix them well.
3. Sprinkle a little bit of water over the okra’s, again add some flour over the okra, spread them with a fork, mix them well.
Fundamentally, try to cover each piece of okra with the flour to achieve crispness.
4. Repeat the Step 3 until entire flour is mixed in with the okra.
5. Heat some oil over medium-high in a pan, add the 1 to 1.5 ladle of okras to the hot oil, after a second, reduce the flame to medium-low. Let them fry until the okras are crisp and golden in color. It may take at least 2 to 3 minutes.
5. For Every batch of okras, increase the oil temperature, drop the okras to the oil, after a second, reduce the flame to medium-low.
6. Sprinkle Some Chat masala over the fried okras, serve them with hot tea/coffee!
