India: Pastry brush, Iron griddle
US : Iron griddle, Chilli powder, Green peas

Procedure:

Step 1: Stuffing

1. In a pan heat some oil and saute the onion until just soft. Season the onion with some salt, chili powder, and turmeric powder.
2. Add the cooked green peas and stir for 30 seconds. Turn off the stove and let the stuffing cool.

Step 2: Samosa sheets

1. In a small bowl, combine the all-purpose flour and salt.
2. Add half cup of water and make a lump free batter and then, pour the rest of the water to make a thin batter.
3. Heat a Flat griddle on medium heat and wipe the pan with little oil.

4. Reduce the heat to medium-low, dip the pastry brush into the batter and apply evenly on the griddle. You need to work fast here, Quickly Apply two to three layers until satisfied with the thickness of the sheet.
5. Let the samosa/pastry sheet cook on medium-low, when you see crest forming on the outer areas, remove the sheet carefully and stack the sheet on a plate.
6. While stacking, place the dry side down or else place the sheets and then, apply some oil on the top side of each sheet before you stack the next sheet.
7. Make sure to wipe the griddle every single time.

Step 3:

1. Remove the sides of pastry sheets to make a rectangle.(don’t throw the sides you can use it to make this recipe)
2. Take a sheet and place the stuffing on one corner of the triangle.
3. Fold the sheet and make a triangle. Secure the ends with (all purpose + water) paste.
4. Let the samosa for few minutes and then deep fry the samosa in medium-hot oil until onion samosa is crispy and brown.

Serve the onion samosa with hot Indian Masala Chai.
