Paneer Kathi roll | Paneer Tikka Masala

Paneer Kathi Roll is a popular North Indian street food. It is one on the go food for busy people. The chapati(Indian flatbread) made of all-purpose flour is stuffed with any kind of masala, folded and wrapped in an aluminum foil/ butter paper.

There are so many varieties of Kathi rolls. On this post, I am sharing paneer tikka Kathi rolls. In Hindi Tikka means small pieces. So the small pieces of any veggies/meat are marinated in curd and Indian spices and grilled, finally added to the tikka gravy.

Ingredients:

Marination:

  • 1 tsp of salt
  • 1 tbsp of lime juice
  • half a tsp of cumin powder
  • 1 tsp of chili powder
  • 1 tsp of coriander powder
  • half a tsp of garam masala powder
  • 1/4 cup of thick curd
  • 1 tsp of Kashmiri red chili powder
  • 400 grams paneer- small cubes
  • 1 tsp of ginger paste
  • 1 tsp of garlic paste
  • 3 tbsp of oil
  • 1 green bell peppers(Capsicum)-cubes

Tikka Masala:

  • 300 grams of onion-finely chopped
  • 1 tsp of garlic paste
  • 1 tsp of ginger paste
  • 150 grams of tomato-finely chopped
  • 1 tsp of salt
  • half a tsp of cumin powder
  • 1 tsp of red chili powder
  • 1/4 tsp of turmeric powder
  • one to half tsp of coriander powder
  • 1 tsp of Kashmiri red chili powder
  • 3 tbsp of oil
  • 1 tbsp of kauri methi
  • half a tsp of garam masala powder

Chapati(outer cover):

  • All purpose chapati dough
  • required oil
  • required all purpose flour

Procedure :

Step 1: Paneer Tikka

  1. Take a large bowl and add all the ingredients for marination except paneer cubes, oil, and capsicum. Mix all the ingredients very well and add the paneer and capsicum to the bowl, Coat paneer and capsicum pieces with the masala. Make sure each piece of paneer is well coated with the masala then, refrigerated the paneer for 30 minutes.
  2. Thirty minutes later, add 3 tbsp of oil in a flat bottom frying pan and add in the marinated paneer and capsicum to the pan. Over medium heat, keep sauteing the paneer until moisture is absorbed.
  3. Transfer the paneer tikka to a plate and keep it aside.

Step 2: Tikka Masala

  1. In the same pan used for sauteing the paneer, heat 3 tbsp of oil and together add onion, tomato and all other spice powder for tikka masala. Saute the onion and tomato until the veggies are tender and become one.
  2. Add the prepared paneer tikka to the tikka masala, sprinkle some Kasuri methi and saute for 3 minutes or so.
  3. Once the paneer tikka is well combined with the onion tomato, turn off the stove.

Step 3: two Layered Chapati

  1. Make lemon size balls of the chapati dough. 
  2. Take a dough ball and roll out to a 5 cm circle. Spread a tsp of oil on the top surface of the circle and sprinkle dry all-purpose flour(maida) all over the oiled surface of the circle.
  3. Then, roll out another dough ball to a 5 cm circle and place it on the first circle. Now, roll out the circle into the thin sheet as possible.
  4. Heat a flat iron griddle, wait for it to get nice and hot. Place the rolled sheet(chapati) on the heated griddle.
  5. When the air pockets start to appear, apply a tsp of oil all over the chapati. 
  6. After a few seconds, when the air pockets puff up, flip the chapati, apply little bit oil on the second side and, press the chapati with a spatula and move the chapati in the circular direction. 
  7. Flip the chapathi two to three times. Once the light brown spots appear on the chapati, stack the chapati on a plate. 
  8. Chapati made by this method will have two layers. Separate the layers so you will get two sheets from one chapati.
  9. If you like perfect circle then trim the edges of the chapati.

Step 4: Paneer Kathi roll

  1. Take a prepared chapati/sheet, place the paneer tikka masala on one side of the chapati.
  2. Pull the chapati place it over the stuffing and push back the stuffing to form a roll.
  3. Fold sides in and keep folding till the end. 
  4. Wrap the paneer Kathi roll in an aluminum foil or butter paper. Voila, paneer roll is ready.
