Rava Laddu is an Indian Sweet recipe made with sooji,sugar,ghee and nuts. It is made specially during the krishna Jayanti Function. Rava Laddu is one easiest sweet recipe and it tastes so good. We actually need just 20 minutes to make this sweet.

Ingredients:
- 15 Cashew nut
- 2 TBSP of ghee
- 1 cup of Rava/Sooji
- 1/3 or 1/2 cup of fine sugar
- quarter tsp(1/4 tsp) of Green cardamom powder
- 1/2 pinch of salt(optional)
- 1/3 cup of hot boiling milk
Procedure:
- In a small frying pan heat required ghee and roast the cashews until golden.
- Add in the rava/sooji, reduce the heat to medium-low and roast the rava for 15 minutes until fragrant. Make sure rava is not burnt.
- Once the rava is fragrant, add the sugar and cardamom powder and mix for 3 minutes on medium-low heat.
- Three minutes later, turn off the stove, remove the vessel from the heat and add the hot milk little by little and mix well. You might need 1/4 to 1/3 cup of milk. For firm rava laddu use 1/4 cup of milk and for soft rava laddu 1/3 cup of milk. Donot add the milk all at once, add 2 tbsp of milk at a time, mix well.
- When the milk is absorbed, cover the pan with a lid and let it rest for 20 minutes then, make small balls of the rava. If reuired grease he palm with little ghee. Rava laddu is ready.
Since milk is used, store the laddu in the refrigerator for up-to 7 days.
Note :
For longer self life, instead of boiling milk use boiling water. But the flavor is better when made with milk.
