Spicy Chicken fry Andhra Style | Kodi Vepudu

Kodi vepudu is a spicy Andhra chicken dish. Kodi means Chicken and vepudu means fry/roast. This Andhra Style chicken fry is a dry dish made with basic ingredients But, you won’t believe the it is so delicious. I first heard about Chicken vepudu from the chef Venkatesh Bhatt. He made this Kodi vepudu in Vijay tv’s samayal Samayal cooking show. I remember he said that Kodi vepudu is Indian actress Sridevi’s favorite food. My version might not be the same as the chef’s version because I learned this recipe from my Telugu friend.

Ingredients

  • 600 chicken Thigh pieces
  • 400 grams or 2 large of onion, finely chopped
  • 200 grams of tomato or 2 medium tomatoes, finely chopped
  • 2 TSP garlic paste
  • 2 TSP of ginger paste
  • 1/3 cup of oil
  • 1.5 TSP of Salt

Dry Spice

  • 1 TSP of chili powder
  • 1 TSP of coriander powder
  • 1/4 TSP of turmeric powder
  • 1/2 TSP of Kashmiri chili powder

Wholes spices:

  • 3, 2 cm cinnamon sticks
  • 5 cloves
  • 3 green cardamom
  • Curry leaves from 4 to 5 sticks

Procedure:

1. In a pan heat some oil, to that add the whole spices, followed by onion and some salt, saute the onion for 30 to 35 minutes over medium flame or until they are brown. Stir the onion in between to avoid burning.
2. Add the garlic paste, saute for 30 seconds or until the raw smell of garlic is gone. Repeat the same for Ginger paste.
4. Add the tomato, saute them over medium flame until they blend well with onion. It may take 20 to 30 minutes.
3. Now add the dry spices, mix them well for 30 seconds.
4. Add the chicken bread pieces to the pan, saute them until the chicken changes its color.
5. Reduce the flame, keep the pan open, continue to cook until chicken is cooked and the masala becomes dry.

Serve the Kodi Vepudu(chicken fry Andhra style) as starter, side dish for Indian breads(naan,roti,chapati),curd rice,rasam rice and sambhar rice.

Note :

1. Saute the onion and tomato in the medium fire, do not raise the flame to fasten the process.
2. Take your time to mince the onion and tomato into minute pieces.
3. If you can eat spicy food then add extra 1/4 tsp of chili powder.
