Spicy Chicken Burger

Spicy Chicken burger is a Southern American delicacy. If you visit southern parts of North America, you can find many mom and pop’s spicy fried chicken food joints. Every week a day is burger day in our home. So I have the opportunity to try different burgers, from vegan mushroom burgers to fish burgers. This spicy chicken burger is the simpler version of the fried chicken burger we get at fast foods. Instead of deep-frying, the chicken patties are shallow fried. The deep-fried chicken version is a little different. I will be sharing the fried chicken burger recipe real soon.

 

Chicken leg roast recipe

Ingredients:

  • 1/4 cup of oil for shallow frying
  • 2- Burger buns
  • Pepper Jack Cheese
  • mayonnaise
  • Tomato and jalapeno Ketchup
  • Mustard
  • Lettuce
  • 4- Chicken patties
  • Pickled Jalapenos or Pickled cucumbers

Spice Mixture:

  • 1/2 tsp paprika
  • 1 tsp Mexican chili powder or any mild chili powder
  • 1/2 tsp cayenne pepper powder or any spicy chili powder available
  • 1/4 tsp Oregano
  • 1/4 tsp onion powder
  • 1/8 tsp ginger powder
  • 1/4 tsp garlic powder
  • 1/2 tsp black pepper powder
  • 1/8 tsp thyme powder or dried leaves
  • 1/8 tsp yellow mustard powder
  • 1/4 tsp white pepper powder
  • 1/8 tsp of celery seed powder
  • 1/8 tsp of white sugar

Chicken:

  • 2 – boneless skinless chicken thighs (165 grams after all the visible excess fat had been removed), cut each thigh into two halves and pound using meat tenderizer or the blunt side of the knife). With kitchen tissue, remove the excess moisture from the meat.
  • 1/4 salt
  • 1/2 tsp spice

Flour:

  • 1/4 cup bread flour or high gluten flour
  • 1 tsp spices
  • 1/4 tsp salt

Bread crumbs:

  • 1/4 cup fine bread crumbs
  • 1 tsp spices
  • 1/4 tsp salt

Egg wash:

  • a large egg
  • 1 tsp spices
  • 1/4 tsp salt

Procedure:

Chicken Patties:

  1. Boneless skinless chicken thighs (165 grams after all the visible excess fat had been removed), cut each thigh into two halves and pound using meat tenderizer or the blunt side of the knife). With kitchen tissue, remove the excess moisture from the meat.
  2. Season both sides of the meat with 1/4 tsp of salt and 1/2 tsp of spices.
  3. Take the bread flour,  fine bread crumbs and, an egg and milk mixture in the separate small trays or plates.
  4. Season the flour, bread crumbs and, egg, each with  salt and  spices. 
  5. Place a chicken piece on the flour and cover the meat with flour. Shake the chicken to remove any excess flour then, dip both sides of the floured chicken into the egg mixture and finally coat chicken with bread crumbs generously.
  6. Bread all the chicken pieces and place them in a tray, leaving a gap between each piece.
  7. Do not let the breaded chicken sit on the counter for more than 10 minutes or so. If you can simultaneously bread and fry the chicken, that would be ideal.
  8. Heat 1/4 cup of oil in an 8 inch round pan for shallow frying. Let the oil become nice and hot. Then reduce the heat to medium-low and arrange the chicken pieces on the hot oil. You can fry four chicken pieces at one patch.
  9. Allow each side of chicken for about four minutes or so on medium-low heat. Remove the chicken patties from the pan and place them on a paper towel to remove excess oil. 
  10. While the chicken is hot, place the cheese slice on the chicken patties.

Chicken Burger Assemble:

  1. Toast the burger bun.
  2. Apply mayonnaise on the bottom piece of a burger bun. Stick the lettuce on top of the mayonnaise. 
  3. Arrange the chicken patties over the lettuce and top it with tomato jalapeno ketchup and mustard. Close the burger with a top piece of burger.
  4. For extra spiciness, use pickled jalapenos.
