Banana bread is a moist, soft, and fluffy cake made with overripe bananas, walnuts, and spices. It is a quick sweet bread recipe perfect for morning breakfast or evening snacks with tea.
Ingredients:
- 170 grams – cake flour
- 90 grams – white sugar
- 1 – large egg(50 to 54 grams)
- 80 ml oil
- 30 ml buttermilk or (mix a tsp of lemon juice/vinegar/apple cider vinegar into the 30 ml room temperature milk)
- 200 to 250 grams of very ripe banana (200g – mild sweet, 230 grams – light and medium sweet cake, 250 grams – Sweet and dense cake)
- 3 grams baking soda
- 20 grams of chopped walnuts
- 1 gram of baking powder
- 1/2 tsp butter flavor
- 20 grams of chopped pecans
- 1/2 tsp vanilla
Spices:
- 1/8 tsp sea salt
- a small pinch of nutmeg
- 1/8 tsp cinnamon powder
- a pinch of clove powder
- a pinch of ginger powder
Topping:
- 5 grams of pecansĀ
- 5 grams of walnuts
Cake Mold:
- 8″x4″ Rectangle pan
Procedure:
- Preheat the oven to 350 Fahrenheit. Line an 8*4 bread mold with parchment paper.
- Combine spices, salt, baking powder, baking soda with the flour and sift it.
- In a cup, add the pecans, walnuts, 2 tsp of prepared flour, and mix well.
- In a mixing bowl, mash the bananas. To the bananas, add in the oil, egg, sugar, vanilla, and butter flavor. Using an electric blender or whisk, combine everything until sugar melted.
- Add the prepared flour to the wet ingredients and gently fold the batter just until no white flour is visible. Overmixing the flour may make bread rubbery and dry. After introducing flour to the wet ingredients, be gentle.
- Pour the buttermilk into the bread batter and gently fold until well combined.
- Finally, fold the nuts into the batter and then transfer the batter to the mold.
- Garnish the batter with some nuts and bake the bread for 70 to 90 minutes until a knife inserted in the center comes out clean.
- Demold the bread to the cooling rack and let it cool.
- Banana bread tastes better the next day of baking. I like to bake the banana bread at night and serve it on the following day.
- Banana bread can stay fresh for up to 5 days at room temperature. Slice the bread and store it in an air-tight container or a zip lock bag.
