Tomato Basil Tortilla

Serves: 3 People

Tomato basil tortilla is a slight twist to the plain flour tortilla recipe. I like to take advantage of abundant summer veggies and include them in food as much as possible. Please check another tortilla recipe appropriate for summer, avocado whole wheat tortilla recipe.

Ingredients:

Tomato Basil Puree:

  • 300 grams tomato
  • 2 tsp oil
  • 1/2 tsp sugar
  • 2 – garlic cloves
  • 1/2 tsp dry basil

Tortilla dough:

  • Prepared tomato basil sauce
  • 1/2 tsp salt
  • 15 ml oil
  • 1.5 cups AP flour or whole wheat flour (adjust the flour)
  • water(if required)
  • 1 tsp oil

 

 

Procedure:

Step 1: Tomato basil puree:

  1. In a medium-size saucepan, add all the ingredients for the sauce and cook it until the tomatoes are soft.
  2. Let the tomato basil sauce cool.
  3. Discard the garlic and, using a blender, puree the tomatoes to a smooth paste without adding water.

Step 2: Dough

  1. Add the pureed tomatoes into a mixing bowl. 
  2. Into the tomato puree, add oil and some salt to salt.  
  3. Add the flour to the puree and mix with a fork. Start with 1/2 cup of flour. If the added flour is well combined with puree, add in the next batch of flour. 
  4. Switch to hand and bring all the flour together to make a soft dough. Knead the dough until no flour is visible and the surface is smooth. 
  5. Apply little oil on the surface of the dough, cover it. Let the dough rest for 30 minutes or so.
  6. Divide the dough into lemon size balls.
  7. Roll out each piece into a thin circle.
  8. Heat a flat pan until the water dropped makes a sizzling sound. 
  9. Place the rolled tomato basil tortilla on the preheated pan and cook. If you see small air pockets on the surface, flip the tortilla to the other side and allow it cook until dark spots form. Flip the tortilla a couple of times until dark spots are visible and cooked.
  10. Straight from the pan, stack the tortilla in a kitchen cloth, wrap them and, keep it in a covered container to prevent the tortilla from drying.
