Vazaithandu pachadi is a simple side dish recipe made with curd and raw banana stem. It is similar to other pachadi recipe. In my blog I have already posted few pachadi recipes. Ingredients
- 1 cup cooked VazhaiThandu (Raw banana stem)
- 1/4 cup grated coconut(only the white flesh)
- 1/2 tsp of salt(adjust to taste)
- 1/4 tsp of mustard seeds
- 1.5 cup of thick curd/yogurt
- 1 tsp of cumin seeds
- 2-green chili(medium size)
Tadka/seasoning
- 2 tsp of coconut oil
- 1/4 tsp of mustard seeds
- 5 curry leaves
- 1/8 tsp of hing/asafoetida
How to clean Banana Stem:
- Butter Milk : In a bowl combine 2 cups of water and 1/2 cup of curd and keep it aside.
- First, Remove the outer tough layers of the banana stem until you see a tender core. Slice the core into thin circles and remove the fiber from each slice. Stack up to five circles and chop the raw banana stem into really small pieces. Immediately put the chopped VazhaiThandu Pachadi (raw banana stem) into the buttermilk bowl(curd and water mixture). Once entire thandi is chopped, swirl the bowl with couple of thin sticks and discard the fiber that sticks. Repeat this three time or so.
- Fill a small pot with water and season the water with some salt.
- Drain the buttermilk and add the banana stem to the pot, cover the pot and let it cook over medium-high heat until tender.
- Once cooked drain the excess water and keep the raw banana aside.
Procedure:
Step 1: Pachadi masala
- In a blender, grind coconut,mustard seeds,cumin seeds,green chili and required curd to a smooth paste.
Step 2: VazhaiThandu Pachadi :
- In a small cup, Combine the cooked raw banana stem, rest of the curd and ground pachadi masala
- Add required salt to the VazhaiThandu Pachadi and mix well.
Step 3:
- In a small pan, heat the coconut oil and when the oil is hot splutter the mustard seeds and curry leaves. Add in the asafoetida, while the oil is hot add it to the VazhaiThandu Pachadi and mix well.
VazhaiThandu Pachadi is ready to serve. Serve the VazhaiThandu Pachadi with any variety rice like peanut rice or with the full meals/thali.
