White Chocolate Cranberry Cookies

White chocolate cranberry cookies set the home with a holiday Christmas mood. Every time I bake these cookies, the aroma of the orange, cranberry, and cinnamon brings back the wintery Christmas memories in an instant. These are simple, quick sweet cookies to enjoy with your family and friends.

Ingredients:

  • 1/2 cup white sugar
  • 1/4 cup light brown sugar
  • 1/2 cup Softened butter
  • 1 – large egg
  • 1/2 tsp of vanilla
  • 1 cup of light all-purpose flour
  • 1.25 cups of quick oats
  • 1/4 tsp of salt
  • 1/2 tsp of baking soda
  • 1/4 tsp of cinnamon
  • 1 cup of white chocolate chips
  • 1/2 tsp of grated orange peel
  • 1 cup of dried candied cranberries

Baking Tray:

Procedure:

  1. In a large mixing bowl, with a blender or whisk, combine the butter with the sugar until fluffy and smooth.
  2. Add the egg and vanilla, and mix well until smooth and silky.
  3. Combine the salt, oats, flour, cinnamon, and baking soda, sift the dry ingredients into the mixing bowl, and gently mix the flour until no white flour is visible.
  4. Mix in the white chocolate chips, orange peel, and cranberries and mix with the cookie batter.
  5. On a large cookie sheet, scoop out the cookie batter and let it chill in the refrigerator for 30 minutes.
  6. Place the cookie sheet in the oven preheated at 375 F for 12 to 15 minutes until the bottom is firm and turns golden. Every oven temperature is different, so keep an eye while the cookies are baking.
  7. Turn off the oven, and place the cookie sheet on the counter for 5 minutes or so. Arrange the cookie on a cooling rack and let the cookies come to room temperature.
  8. Once the white chocolate cranberry cookies are cooled, store them in an airtight container for a week or so.
