Egg pepper fry is a spicy semi gravy recipe made with boiled eggs. It is a traditional south Indian Chettinad style egg masala recipe. The key ingredients for this recipe are freshly ground black pepper powder, short dry red chili and gingelly oil(Indian sesame oil).
I like to serve the egg masala with rasam sadam,paruppu sadam, and chapati. You could also include this egg pepper fry in your guest menu along with veg biryani/chicken biryani/tomato biryani.

Ingredients:
- 5- boiled eggs
- 1/4 cup of gingelly oil
- 300 grams sliced red onion
- 150 grams country tomato(sliced)
- 1 tsp ginger paste
- 1 tsp garlic paste
- 15- curry leaves
- 1/4 tsp of chili powder
- 1/2 tsp of coriander powder
- 4 tsp of black pepper powder(fresh ground), divided
- 3 tbsp of chopped coriander leaves
- 1/8 tsp of turmeric powder
- 1.25 to 1.5 tsp of salt(adjust to taste)
- 2 cups of water
- 1/4 tsp of homemade garam masala
Whole Spices:
- 2- short dry red chilis
- 1- tsp fennel seeds
- 1- bay leaf
Procedure:
- In a pan heat the required oil. When the oil is hot, fry the whole spices for 3 seconds.
- Add in the onion, coriander leaves, and curry leaves, saute the onion until golden brown, followed by ginger and garlic paste for 3 minutes.
- Saute the tomatoes until mushy. While sauteing tomatoes add some salt to the veggies.
- Add in the spice powders(chili powder, coriander powder, turmeric powder, 2 tsp black pepper powder, 1/4 tsp of garam masala) and mix for a second.
- Pour the required water to the pan and mix well. Make six slits all around the eggs vertically and drop the eggs to the pan. Adjust the seasoning, cover the pan and, Let the egg pepper fry cook for 5 minutes over medium heat.
- Five minutes later, open the pan, add the rest of the black pepper powder and keep stirring until the egg pepper fry sauce is thickened then, turn off the stove. Egg pepper fry is ready.
Serve the egg pepper fry with boiled white rice rasam rice, sambhar rice, chapati, and biryani.

Hi Surya, It is gingelly oil, collected from sesame seeds. Gingelly oil is a colloquial term used in Tamil Nadu, India. Sesame oil is used in traditional South Asian cuisine. It has a nutty, slightly bitter and savory taste. However, sesame oil from each region differs in flavor. For instance, Koreans use toasted sesame oil in their cooking. Similarly, there are Chinese sesame oil and Japanese sesame oil. For the Indian cuisine, please use Indian sesame oil/gingelly oil. Indian sesame oil is available in refined and cool pressed unrefined forms. You could choose either one that suits your preference. However, I am giving the link for the popular Indian brand.
