Okra sabzi is a simple Indian style sauteed okra recipe. During this COVID-19 virus season, everybody is searching for healthy as well as simple and delicious recipes. Because of the current situation most of us are forced to make a meal with the ingredients available at the grocery store. So I have decided to share some simple Vegan meals that are in green color. Here is the first Nutritious and tasty vegan meal combo Avocado tortilla with okra sabzi.

Ingredients for :
300 grams okra/ladies finger
1 – small onion chopped
1/4 of a medium-size tomato – chopped
2- tbsp of oil
Spices:
1/8 th tsp of turmeric powder – Optional
1/4 to 1/3 tsp of Indian red chili powder or cayenne pepper powder
1/3 tsp of coriander powder(optional)
1/3 tsp of salt(adjust to taste)
1/8 tsp of cumin powder(optional)
Procedure:
Step 1:
- Arrange four to five okra on the cutting board, as seen in the photo. Trim both ends of the okra and then chop them into 1/2 inch pieces.
Step 2:
- In a frying pan, heat the required oil and all the spices and salt to the oil. Mix the spices for a second.
2. Add in the chopped onion, tomato, and okra all at once into the pan. Mix the veggies and the spices very well.
3. Reduce the heat to medium-low and cover the pan with a lid. Let the veggies cook on low flame until tender. Every once in a while, remove the lid and give a quick stir to avoid the scorching at the bottom.
4. On medium-low heat, it will take about 30 minutes to cook the okra. Make sure not to add water, the water in the veggies is more than enough for okra fry/sabzi/poriyal.
Serve the fry/poriyal/sabzi with rice,breads and chapati.
