Ingredients:
700 grams of bone in and skin on chicken pieces
350 grams of finely chopped onion( 3 medium onion)
2 small dry red chili
1 small green chili
2 TSP of ginger paste
2 TSP of Garlic Paste
4 TBSP of oil
15 to 20 Curry Leaves
1/2 cup of finely chopped coriander leaves
2 TSP of Pepper powder
1/2 TSP of garam masala powder(optional)
1 to 1.25 TSP of Salt
1/2 TSP of Turmeric powder
Whole spices:
2 cm cinnamon sticks(2)
3 Cloves
1 Bay leaves
1/2 Star anise
3 Cardamom
Procedure:
1. In a pan add the curry leaves, green chili, and some oil, Cover the pan half open, heat the oil over medium-high until the green chili becomes pale green
2. Add the whole spices and dry red chili, saute them for 10 seconds and add the chopped onion, some salt. Saute the onion until onions are soft and translucent.
3. To the cooked onion add the coriander leaves and garlic paste, for 30 seconds. Repeat the same for ginger paste.
4. Add all the dry spice powder, salt, and chicken, mix everything together until the chicken changes its color.
5. Now reduce the flame to medium-low, cover the pan, cook the Pepper chicken for about 20 minutes or until chicken soft and cooked well.
6. Finally, garnish with some curry leaves or coriander leaves, enjoy the pepper chicken fry with rice or any Indian flat breads.
