Pepper Chicken dry is a south Indian Spicy Chicken side dish recipe. In my blog, I have shared quite a different variations of pepper chicken recipe but, for this pepper chicken fry recipe, I have used the leftover chicken piece from kuska stock made for chicken kuska biryani.

Ingredients :
- 750 grams of chicken pieces – Chicken pieces separated from Kuska stock
- about 1 cup of chicken stock
- 4 tbsp of gingelly oil
- 10- curry leaves
- 3 – short dry red chili
- 4 to 5 tsp of black pepper powder(fresh ground)
- 15 – shallots – sliced(optional)
- Salt – if required
- 2 -tbsp coriander leaves-chopped
- 1/4 to 1/2 tsp of garam masala powder
Procedure:
- In a pan heat required oil and when the oil is hot fry the curry leaves and chili for a second. If you’re using shallots, add the shallots to the pan and fry until translucent. Then, add the chicken pieces with 2 tsp of black pepper powder and let the chicken cook.
- When almost most of the chicken is absorbed, add another 2 tsp of black pepper powder and saute until pepper powder is well coated over the chicken pieces. Turn off the stove and garnish the pepepr chicken dry with fresh coriander leaves.
Serve the pepper chicken dry with plain biryani/veg biryani/chapati/rasam rice.
