Penne Arrabiata is a spicy Italian Pasta recipe. It is an easy pasta recipe made with basic ingredients like tomato, garlic, olive oil, dry red chili, and parsley. It is also called spicy red sauce pasta. Arrabiata means, hot and penne is a type of pasta. It is a tube pasta with lines on the top. Penne is an ideal pasta because the lines on the pasta can hold the red sauce very well.

Ingredients :
- 6 – 10 Roma Tomato(Bangalore Tomato)
- 3 – dry red chili- remove the seeds and chop into small pieces
- 1 – garlic clove-chopped
- 1 tbsp parsley-chopped
- 4 tbsp of extra virgin olive oil
- 1/2 tsp of sugar
- 1/2 cup of grated parmesan or any available cheese
- required crushed black pepper(optional)
- 2 cups of Penne pasta
Procedure :
Step 1: Blanch the tomato
- Make a cross on the tomatoes and then boil the tomatoes for 20 minutes or so. Let the tomatoes cool and then, peel the tomatoes skin, remove the seeds and grind the tomato to a paste.
Step 2:
- Heat the plenty of water in a pot and bring it to boil. Season the water with some salt the water should be salty.
- When the water boils, add the penne paste and let it cook until soft, about 12 minutes or so. Then drain the paste and reserve with some pasta boiled water.
Step 2: Red Sauce
- In a pot add the olive oil, garlic and dry red chili. Heat the pan until the oil is nice and hot. Add in the ground tomato to the pot and let it boil for 5 minutes or so. Season the red sauce with some salt, sugar, and black pepper.
- Once the tomato is well cooked and becomes like a sauce, add the cooked penne pasta to the red sauce with some paste boiled water and mix well.
- Finally, garnish with chopped parsley and parmesan cheese(or any cheese of your choice). Red sauce pasta is ready!
Note :
For Vegan version, skip the cheese.
