Thiripagam – Tirunalveli special

Thiripagam is a traditional Tirunelveli special Sweet recipe. Tirunelveli is a district in TamilNadu, India, known for its world popular special sweets like Tirunalveli eruttu kadai halwa. In the Tirunelveli district, thiripagam is usually prepared for Diwali/Deepavali. Diwali is an Indian festival celebrated during the November month.

Thiripagam is made of three main ingredients besan, milk, cashew. Hence the name is thiripagam, Thiri means three. It takes only 20 minutes to prepare this sweet.

Ingredients :

  • 1 cup – besan flour
  • 2 – cups-boiled milk
  • 1/3 to 1/2 cup of white sugar
  • 1/3 cup of ghee
  • 1/4 tsp of cardamom powder
  • 1 cup of cashew powder

Procedure:

Step 1: Thiripagam Solution

  1. In a small frying pan, roast the besan flour over medium-low heat until fragrant. Make sure the besan flour is not burnt.
  2. Once the besan is fragrant, turn off the stove. Remove the pan from the stove and let it cool.
  3. Make sure the besan is cooled then, pour a half cup of milk and mix well without any large lumps. Slowly add the rest of the milk and mix well.
  4. To the besan and milk mixture, add the sugar and let it dissolve.

Step 2: Thiripagam

  1. Heat the thiripagam solution over medium heat until besan starts to thicken. During the entire process, keep stirring the besan.
  2. Once starts becomes thick, add required ghee little by little at regular interval until the besan does not stick to the pan. Add a batch of ghee, mix well and let the besan absorb the ghee and then add the next batch of ghee.
  3. When the besan becomes a non-sticky thick paste, add the cashew powder, cardamom powder and mix well until the cashew powder is well combined.
  4. Finally, add the last batch of ghee, mix well, and turn off the stove. Thiripagam is ready.

Serve the Thiripagam with friends and family.
